Tiramisu Cupcakes



Tiramisu Cupcake, Today is an extremely special day for me. My dearest and sweet little brother has got a new start in his carrier by accomplishing his desired goal.  
         "Mitha to Banta hai Boss" 
Here's the quick way to enjoy tiramisu in a compact package with a twist.This cupcake is a bomb:) with the flavors of traditional tiramisu like coffee and chocolate. So try them when you want tiramisu quick in probably the best way.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
3 tbsp Instant Coffee
2 tbsp Cocoa Powder
½ Cup Sugar
¼ Cup Oil
2 Eggs
1 tbsp of Vanilla
¼ Cup Hot Water
1 tsp Baking Powder
2 tbsp Curd/Sour Cream
¼ tsp of Salt


Topping:

2 Cup Whipped Cream
2 tbsp Small Chocolate Chips


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Muffin Pan.

1) Preheat your oven to 350F. Line muffin tin with cupcake liners and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Cocoa Powder, Salt and set aside. Mix hot water with  Instant Coffee and set aside

3) In another bowl mix together the Oil, Eggs, Vanilla, Sour Cream and sugar until the mixture gets fluffy .

4) Add flour mixture into above egg batter slowly alternate with coffee water.

5) Pour the batter into cupcake tin, Bake for 20-22 minutes.

6) Once cupcakes are baked, let them cool completely. Then, top cupcakes with whipped cream and sprinkle chocolate chips over the top.

Enjoy!


Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Masaledaar Channa Dal




Masaledaar Channa Dal, This one i love to eat as a side dish or sometimes as a meal, When i am alone at home for lunch and want quick lunch without compromising on taste. Try this recipe to make change in your menu with complete flavors.

                     Ingredients:
                       Serving: 2 Persons
1 Cup Overnight Soaked Channa Dal 
1 Medium Onion Sliced
1 Medium Tomato Sliced
1 Green Bell Pepper Sliced
1 tsp Cumin Seeds
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish

1 tsp Lime Juice
Salt and Pepper as Taste

Process:
1)     Pressure cook channa dal with ¼ cup water for one whistle and set that aside. Heat the Oil in large skillet on medium high heat.
2)     Once Oil is hot, add in Cumin seeds, Green Chilies and Ginger Garlic paste.
3)     Once Ginger Garlic turns brown add Onions Tomatoes and stir continuously till they turn glossy. Add in Coriander Powder, Chat Masala and Salt & Pepper. Stir it well.
4)     Then, add in cooked channa dal and mix well. Stir continuously.
5)     Cook for 5 minutes on low heat with lid on.
6)     Garnish with Lime Juice, Cilantro and Serve hot.

Homemade Whipped Cream


Homemade Whipped Cream, really easy to prepare at home and in few minutes you can get fresh and flavorful whipped cream to top you cakes, cupcakes etc. I prefer to prepare homemade whipped cream for my cakes. Please try and let me know your comments.


Ingredients:


1 Cup Heavy Whipping Cream
1 tsp Vanilla Extract
2 tbsp Powdered Sugar


Process:

1) Whisk heavy whipping cream until soft peaks form. Then, add in powdered sugar, vanilla extract and continue to whisk until form stiff peaks. Now you are all set to top cakes and cupcakes with this icing. 


Tips:

1) Place whipped cream in refrigerator to preserve.

Almond Crumble Pound Cake



Almond Crumble Pound Cake, This cake is one the most flavor full cake i have made till date. Combination of crunchy almonds with cinnamon makes this cake so aromatic that cannot be explained in words. What most i love about cake prepared in loaf pan is we get good soft center to enjoy the flavors fully. So i hope you will try this and let me know the comments.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Butter
2 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
3 tbsp Curd
¼ tsp of Salt


Crumble Toping:

1 tsp Cinnamon Powder
3 tbsp Brown Sugar
¼ Cup Sliced Almonds
1 tbsp Maida
1 tbsp Soften Butter


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf pan with parchment paper and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and Sugar until the mixture gets fluffy, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract and mix well.

4) Add flour mixture into butter batter slowly alternate with curd.

5) Mix Cinnamon Powder, Brown Sugar, Almonds, Maida, Butter and make crumbly mixture. 

6) Pour half the batter into loaf pan then layer with crumble topping. Again pour rest of the batter and then after spread crumble topping all over evenly.

7) Bake for 50-55 mins, let that cool for 10-15 mins and Enjoy!


Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) Salted butter can be used, In that case avoid salt.

3) All the ingredients should be at room temperature.

Egg Bhurji (Scrambled Eggs)



Egg Bhurji, The Easiest Wholesome Appetizing Indian side dish. This works really well when we want to make something really quick with less effort but, off course tasty. When i used to work, that time i wanted to make some quick dish that i could take for lunch..then, this one really helped me allot. I tried it with Tortillas and believe me, the novel idea stimulated the whole newer set of taste buds all together. It went brilliant with my homemade Tortillas & a glass of Cranberry juice on that nippy day in Grand rapids!! 

                     Ingredients:
                       Serving: 2 Persons
4 Eggs Beaten
1 Medium Onion Sliced
1 Medium Tomato Sliced
1 Green Bell Pepper Sliced
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)     Heat the Oil in large skillet on medium high heat.
2)     Once Oil is hot, add in Cumin seeds, Green Chilies and Ginger Garlic paste.
3)     Once Ginger Garlic turns brown add Onions, Tomatoes & Green bell pepper and stir continuously till they turn glossy. Add in Coriander Powder, Chat Masala and Salt & Pepper. Stir it well.
4)     Then, add in scrambled beaten Eggs and mix well. Stir continuously.
5)     Cook for 5 minutes on low heat with lid on.
6)     Garnish with Cilantro and Serve hot.

Caraway(Ajwain) Cookies


Caraway(Ajwain) Cookies, This recipe of my all-time favorite Caraway(Ajwain) Cookies. These are buttery 
& flaky goes best at tea time. I am big time ajwain cookies fan since childhood and my mother used to bring it oftentimes for me:) So i just tried them make at home and they came out really well. Try this and let me know if you liked.

              Ingredients:
1½ cup of All Purpose Flour/ Maida
1½ tbsp Sugar
 1 Cup Butter
  ½ tsp Salt
 ½ tsp Baking Powder
   ½ Cup Warm Water
1 tbsp Curd
1tbsp Caraway Seeds

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 350F. Grease the cookie pan with butter and cover the bottom with butter paper.
2)     In a bowl sieve flour, baking powder and Salt. We will call it Bowl 1 from now onwards.
3)     In another bowl mix together the Butter and sugar until the mixture gets fluffy and then add in Curd, Caraway seeds and mix well with the help of spatula. Let’s call it Bowl 2.
4)     Add in flour mixture into butter mixture (i.e. Bowl 1 to Bowl 2) and fold it well with spatula until everything’s get well incorporated.
5)     Add in milk little by little and mix well. Arrange cookie dough on baking sheet with help of small sized ice cream scoop leaving enough space in between cookies.
6)     Bake them for 25-30 minutes and it’s done.

Tips:
1) Don't over mix the batter.

Nariyal Ke Laddu


Nariyal Ke Laddu, one of my all time favorite desert. Try this and i am sure you wont be able to wait for a reason to make this delicious laddu:)


              Ingredients:
                 1 Cup Water
1 Cup Dry Grated Coconut

1 Cup Sugar
1 tbsp Charoli (Chironji)

Process:
1)    Take a thick bottom pan and add in water with sugar. Boil on medium high heat to make a thick syrup, we say the consistency of the syrup as three string(teen tar) consistency. 

2)     Once the syrup is ready, we add in coconut and chironji and stir continuously till coconut is going sticky. Then remove coconut mixture in a bowl and let it come to warm stage. 
3)     Now you are good to go to make any shape you like to, as i make laddu's with the help of hands and serve once completely at room temperature. 
4)     These laddu's have a week of self life, so i prefer to preseve them in refrigerator.

Bread Pizza



Bread Pizza, today i want to declare myself as certified pizza lover:). I need it meaning i just need it, so i have to make pizza my own way as a anytime quick snack with a portion you love to have. Bread is one thing people have it in there pantry most of the time, toady i want to use the bread to make instant pizza. I hope you give it a try when u want to have pizza without the effort of ordering:)

            Ingredients:
4 Slices Bread(Any Kinda)
 ¼ Cup Chopped Onions

¼ Cup Chopped Tomatoes

¼ Cup Chopped Green Bell Pepper
½ Cup Mozzarella Cheese
1 tbsp Ketchup

jalapenos as per taste

Salt and Pepper as taste

         Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 400F. Place bread peaces over baking pan and spray both sides with oil spray.
2)     Spread onions, tomatoes, green bell pepper over the bread pieces with the good sprinkle of shredded mozzarella. cookie dough through out the pan evenly and bake for 20 minutes.
3)     Mean while lukewarm the condensed milk and put chocolate chips in condensed milk, let it rest for 5 minutes. Place jalapeno and ketchup over with the touch of salt and pepper as per taste.
4)     Place the baking pan in oven for 10 minutes and serve hot.

Bhaji From Pav Bhaji



Bhaji From Pav Bhaji, tell me who doesn't like Pav Bhaji. I have already shared my recipe for Pav in previous post. I am sharing a quick though flavor full Bhaji. As everybody knows bhaji is quite buttery, i have tried to make this with least butter with the flavors preserved. So give this a try and let me know if you liked this.

          Ingredients:
           Serving: 4 Persons
1 Cup Cauliflower Chopped
1 Cup Eggplant Chopped
2 Medium Potatoes Chopped

Medium Onion Chopped

Medium Tomatoes Chopped

1 Cup Chopped Carrot
1 tsp Ginger Garlic Paste
1 tsp Cumin Seeds
½ Cup Peas

2 tbsp Pav Bhaji Masala
1 tsp Coriander Powder
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil

1 tbsp Butter
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)    Pressure cook carrots, potatoes, cauliflower, peas, eggplant or any other vegetable of your choice with half a cup of water for 5 minutes till vegetables softens.

2)     Heat the Oil in large skillet on medium high heat, add in cumin seeds till aroma comes. Then add in ginger garlic paste, onions and stir till onions turns light brown.
3)     Add in green chili and tomatoes. Cook them till oil separates then add in salt, pav bhaji masala, red chili powder, coriander powder and stir well.
4)     Add in cooked vegetables with water in it, continuously stir and mash with potato masher for 10 minutes on simmer.
5)     Bhaji is ready, Serve with how much butter to love to have on your bhaji with the sprinkle of cilantro.

Homemade Pav



Homemade Pav, this is something people buy from market if they make "Pav Bhabji" at home, but , I decided to make myself. I know, its a bit of the work behind making bread at home but, trust me the fresh bread is no where near to the market brought bread. So, please try this recipe and lemme know how you liked it.


Ingredients:

1 Cup All Purpose Flour/ Maida
½ tbsp Active Dry Yeast
½ tbsp Sugar
1 tsp Salt
1tbp Milk
2 tbsp Oil / Clarified Butter
½ Cup Lukewarm Water


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)Take a bowl with lukewarm water, Add in Yeast, Sugar and let it rest for 5 minutes covered to let yeast active. Now sugar works as food for yeast which is key ingredient.

2) Once yeast turns frothy, take another bowl with flour in and add yeast mixture with salt. Continue kneading until it makes soft dough then too continue kneading for at least 5 minutes. This is to create gluten in dough that makes fluffy and soft pav. 

3) Now add in melted butter/Oil to the dough and kneed again till the dough absorbs all the oil.

4) Cover the dough and let it rest for an hour. After an hour you will observe the dough turns double i.e fermented. Now punch the dough and make equal size round balls.

5) Spray a non stick baking pan with oil and put these dough balls on the baking pan with some distance in between the dough balls. Cover the dough balls with kitchen towel/Plastic cover and let them rest for another half an hour.

6) After half an hour preheat the oven at 400F. Brush the dough balls with milk and bake for 25-30 minutes.
